"This croissanterie was never a busy place and underwent an extensive and probably expensive refurbishing some time ago. The new remodeled location offers limited seating downstairs. The decoration is hospital-white. The shop is usually operated by one employee only, who's most of the time in the kitchen somewhere in the back, not at the front desk. Fist problem, other similarly shops have open kitchens so customers don't feel let down when the guy is in the kitchen. Here there's a CCTV. The usual customer experience is first a long wait till they notice you on CCTV, and often you remain unnoticed or ignored and need to call "anybody there?". I've left several times after a too long wait and the customer before me left after seing the counter unattended. Then there's the empty tray problem. In most self service restaurants, the place to drop the empty trays and throw the trash we be easy to find and close to the exit. Here it's well hidden and for that reason, most people leave their trash on the table. So despite this shop barely has any customers you'd see most tables "occupied" by unremoved trash. Today a lady had to trespass a "wet floor" sign to find an empty table, and the shop lady wasn't happy about it. The customer just said "how can I sit elsewhere all tables are full of trash". Summing up, this shop was obviously refurbished by people with no clue about the food business, and it's run by equally clueless employeed who, despite friendly, couldn't possibly overcome the design flaws of this retail location. If this shop fails again as its previous version did, it will be a pity, because it's a prime location and the bakery products are good. It's a nice place to have breakfast, or order a sandwich, but there's lots of competition around and I could't tell what advantage this shop offers, compared to the many others. I'm a local, have breakfast every morning in one of those shops, I purchase a lot of sandwiches, and for all aforementionned reasons, I'm not a regular at "Bongou"."
