"40€ dumped on December 24, 2020, for doing something different, my partner and I order a tasting menu for 2 to eat at home. We picked up the order personally, as the jot eat did not bring it (the restaurant has no domestic service.) when I called on the phone to order it, I asked the Lord expressly that he was trying to me that if it wasn't spicy (because I can't eat it), and he replied that only the rice was a bit spicy, but only a little below that premise we went. already the presentation left much to wish, all stacked in a large metal container (sorts of meat of different colors and textures above two different types of rice) accompanied by three plastic packaging with sauces. and without any explanation of what we were eating (which by the way does not specify the letter.) we never knew what it was. The only thing good, everything has to be said, was the bread. In that context we ate a piece of something that looked like chopped meat (from the big bowl) and I slept the spicy tongue, while chopping my lips. Even when I took a lot of water, I didn't have the feeling, and I couldn't keep eating. "I went to dinner with my partner on the humanity menu, which is the one with the Michelin star €150/person approximately). It was a disappointment, in my opinion not worth anywhere near the money you pay for the food. The first courses started fairly well, it was good although it wasn 't crazy, the little piece of chop that they gave us was the only thing worth mentioning it was very good), the rest was nothing more... When the river and sea dishes began This is when the disappointment really began, they all tasted the same to us, with the same touches, I don 't know whether to say citrus or a little spicy I 'm not an expert), but all accompanied with that same flavor. To top it off, as the waiter asks your opinion on each dish, we were honest and told him that we weren 't liking it very much. "La @lafabricaburgos es uno de esos sitios en los que vas a comer bien, con productos de calidad en su oferta gastronómica y en un concepto en el que puedes encontrar dos espacios; uno más informal en el que puedes comer a la carta o un menú ejecutivo de lunes a jueves denominado la fábrica y un segundo espacio en el que encuentras el restaurante de @ricardotemi en el que puede disfrutar de su menú degustación. Nosotros optamos por la primera opción, estuvimos en la fábrica, el espacio más informal en el que lo primero que te llama la atención cuando ves la carta es la posibilidad de pedir medias raciones en casi todos los platos. Esto para nosotros se convirtió en un punto a favor porque no queríamos un menú degustación tan largo pero si probar muchas cosas y esto es algo que te permite @lafabricaburgos. Para nosotros, lo que más destacamos de todo lo que probamos fue el EQUILIBRIO en los platos. Todos los ingredientes estaban en su justa medida, y el protagonista de cada plato no quedaba para nada enmascarado con salsas o guarniciones. Qué rico todo. 1️⃣ La Fábrica 2️⃣ Aperitivo de la casa. “Caldo de pescado”. Saborazo, contundente. Que rico!!! Toda una declaración de intenciones de lo que nos esperaba. 3️⃣ “Croquetas de mejillón bouchot” y “Buñuelos de Bacalaoy queso Idiazábal”. 4️⃣ “Croquetas de mejillón bouchot”. Menuda croqueta! Cremosa, cremosa con todo el sabor del mejillón y su ligero toque picante emulando al mejillón tigre. Rebozado y crujiente, perfecto. Sabrosa. 5️⃣ “Buñuelos de Bacalaoy queso Idiazábal”. Extraordinario. El queso aportaba la cremosidad perfecta sin “tapar al bacalao” y poder disfrutarla al máximo. 6️⃣ “Gyozas de lechazo a baja temperatura con jugo de asado”. Otro plazo. Que exquisitez. Tah fresca y casera con un lechazo tierno en su interior y todo ello regados de su propio jugo. Un auténtico manjar. 7️⃣ “ Lubina salvaje a la brasa con escalivada en Josper” Pescado en su punto de brasa. Tierno, muy sutil de sabor y crujiente la piel. La guarnición con la escalivada riquísima y acertadisima en el que el toque de parrilla y horno del Josper se notaba mucho. 8️⃣ “Albóndigas de Wagyu con trufa”. Otro platazo. De un sabor tan intenso, con un fondo bestial, y ternura que lo convirtieron en un auténtico manjar. La guarnición, con esa patata casera de siempre, era más que acertada y casi que diría que obligada. Espectaculares . 9️⃣ “Tarta Cremosa de Queso”. Así venía anunciada en la carta. Y desde luego que el nombre le hacía justicia. Muy cremosa, fina de sabor, con una ligera base de galletas que no se comía el sabor del queso. Deliciosa. De las mejores tartas de queso que me he comido. “Petit Fours”. Turrón artesanal de natillas. Cuando después de comer, no sabes con qué plato quedarte, es síntoma de que el sitio merece y mucho la pena. A todos los platos que probamos podría ser perfectamente . En la @lafabricaburgos apuestan por la cocina de siempre, una cocina con clásicos y con fusiones internacionales que representan a la comarca burgalesa. Lugar más que recomendadísimo."
