"surprised by the flood during the visit of matera we trusted our guide luigi: completely pumpkin and running we took refuge in this cave without even knowing its name. the very young and very kind owner has welcomed and guided us within what has turned out to be a very pleasant, essential and well-kept space (also from the point of view of the anticovid protocols, including the control of the green passes), renovated so well that neither the absence of windows nor smells of kitchen or other. the menu of tradition revisited with goto and balance thanks to excellent raw materials and unoffended combinations streaks the eye both to a young clientele, starting from aperitifs, and to those looking for a rewarding and non-banal experience. the offer includes two different menus with wine matching, some possibilities of cutting boards, burgers and bruschettes with really special ingredients, a couple of desserts and three special suggestions of coffee in moka (provate them but the boys (yes, because the kitchen is the realm of a young chef) are available to welcome where possible the needs of those who sit at their comfortable tables. always with smile and courtesy. we come to us: in two we chose to share the menu of degotation origins by savoring, with eyes and gotive papillas, the crescendo of tastes wisely balanced by appetizers to dessert. I find it useful to list the names of the courses, they would say nothing: almost all of us would be able to find captivating titles. I think instead it is necessary to give to these two brave boys (but above all to her that, in the full pandemic, decided to invest all herself in this almost cyclopic enterprise founded on passion, care, professionalism, commitment and so much effort) the recognition they deserve and our willingness to personally try their dishes. that they ferment vary and mature with them, with the experience they accumulate, with the inevitable little mistakes from which they learn. go in person, because reviews, even mine, are subjective and can only give a small idea of someone's opinion. I would be pleased to have lit the curiosity of those who have had the patience to read here, so that I go to taste the recipes of ferment. which is much more a wine bar, as the sign says, which in my opinion can be translated. and patience if the place suddenly fills and waiting times stretch for a few minutes, when until that moment you were pampered with the story of the dishes history but also of the adventure that this place represents. the light and refined background music, a chat and a sip of good wine will fly those few minutes and enjoy even more the next dish and if it says an absemia. I forgot: the prices are at the reach of all and beyond correct; the location is very central, reachable with few steps (I recommend the parking park scotellaro); ferment has a suggestive outer space; the bath of the ferment deserves a special mention: clean and designed with original functionality, given the natural structure of the cave."
