"We are the day before November, holiday, direction castelnaudary with the hope of finally eating a real sleep... but it starts very hard, it starts bad, it starts very bad... it rains ! more, we are a holiday weekend and then, no way to find a table, it’s complete everywhere, we don’t insist, so we break for limoux that is just a few kilometers. So, limoux, it’s a small little town, the sun is on the rendezvous, there’s a concert on the place of the republic, everyone is at the party, the terraces are filled, but with the concert, I like to be inside (smiley)! an establishment makes me look, the big coffee in the heart of the place of the republic. It immediately reminds me of the great coffee of gum with dishes of the great coffees in general, especially the sauce which is jealously guarded by the initiates. The place is magical, leather, b(l)anquettes (smiley,) marble, very Art-Déco luminaires, a small counter where a gentleman of a respectable age is agitated, it is the boss in fact, who, in the conversation we will have at the end of the meal, will not tarry anecdotes. An aperitif to forget Castelnaudary... white wine picon, super well served... by tasting it, I walk the map of the establishment. My gaze stops on the limoux’s money, everything I love... my choice is made, it’s definitive! So in the limoux's dough, what have we?bin, pork, shoulder, collar, heart and liver, it is a regalade! add to this a nice red merlot pichete and you will have a very pleasant lunch.
