"I ate in La Hostaria 900, an elegant place that provides a full menu of meat or fish. Orazio Galanti, owner and a lover and promoter of the region and its food, has spent his life among his family’s kitchens and vineyards,. He is passionate about getting and serving the best. He serves D.O.C. (Certified Origin) products, importing from other parts of Italy when necessary. He also is a gifted sommelier. With a few questions, he decided on a wine for me: Red or white? Heavy or light? Still or bubbly? The menu is extraordinary. Its high points are its inclusion of local beef, pork, mutton, and wild boar as well as the extensive selection of local cheeses, and the expert combination of mushrooms, chestnuts, pistachios, and fruit with the many manifestations of handmade pasta, many of which are filled. As an appetizer, I had the crispy polenta bits with Squacquerone cheese. The crispiness of the polenta with the fresh cream cheese was a perfect pairing. The risotto with white truffles and porcini mushrooms that I had as my primo piatto unlocked a world of flavors. My meat dish was a mixed grill of local beef, lamb, and free-range pork. The quality of the meat came across with a clear and penetrating gustatory bang. The pleasure of my meal at the highly reviewed and highly rated Hostaria 900 was only matched by the pleasure of meeting and talking with Orazio. It was a privilege to feel his enthusiasm and dedication to his region and its food."
